High Peaks Watermelon Mint Mojito

There isn’t a better time than the summer for a Mojito, but sometimes you need to switch it up. We thought it would be fun to make a Mojito variation with our Watermelon Mint CBD Seltzer rather than the classic soda water classic Mojito’s are made with. So follow along with this easy recipe to make a Mojito with a twist!

First, you will need to make agave syrup – don’t panic! It’s very simple: just equal parts agave and water. We recommend making this with half a cup each of agave and water, that way you have plenty for seconds (or thirds)! Simply stir the two until they become a cohesive liquid. Store the agave syrup in the fridge in a sealed container (feel free to use it in coffee, tea, or more cocktails!)

Next, you will need a wheel of a watermelon. Cut the watermelon wheel in half and make one half into cubes. Put them in the freezer for at least two hours.

Once they’re frozen, slice a thin wedge of watermelon from what is left over – about ¼ inch thick. Okay, now we are ready to make this Mojito!

Watermelon Mint Mojito

Serves 1

  • 4 ounces High Peaks Watermelon Mint CBD Seltzer
  • 1 ½ ounce white rum
  • ½ ounce agave syrup
  • ½ ounce lime juice
  • ¼ cup watermelon cubes
  • 2 sprigs mint

Place 4-6 mint leaves in a shaker. Add rum, lime juice, agave syrup, and ice. Shake and pour into a highball glass. Add frozen watermelon cubes and more regular cubes to fill the glass. Top with High Peaks Watermelon Mint CBD Seltzer. Stir then place thin watermelon wedge in glass against edge so you can see it from the outside. Garnish further with mint sprig.

Not drinking right now or ever again? No problem! You can make this recipe without rum. It will still be a light, refreshing, summery treat for you!
